So I went to update to 6.1 so I could Jailbreak.

Backed up, iTunes froze whilst updating - no biggie.

Updated to 6.1. Attempted to restore from the backup only to be presented with:

"iTunes could not restore the iPhone because the backup was correct or not compatible with the iPhone being restored"

I REALLY don't want to lose all of my data so how can I fix this?????

First off, you needed to do a Restore to 6.1.0 not an update. Have you tried going into DFU and restoring from there?

Will try the Restore to 6.1 just now.

I've been flying around Google and have seen some stuff about Backup extractors? Anyone know of a good (free) one?

Edit: Restoring to 6.1 did not fix the issue :/ This is frustrating.
