I have just acquired a Macbook Pro and am trying to set up language and keyboard.

In Windows, my language and keyboard settings were:
1. British English - US International Keyboard (I also use this for other languages, hence the need for an international layout)
2. Belgian French - Canadian Multilingual Keyboard (the only QWERTY layout for the French language)

How can I get my Mac set up so that the spell checking language and keyboard layout work the way I am used to?

I also used to use WinCompose to enter compose key sequences. How can I do this on a Mac? I've read that I need to use Karabiner, but there is nothing obvious about how to use Karabiner to do anything.
