I might be overthinking this but I require a USB-A to USB-C to use with CarPlay - would any cable be suitable, or are there some that are charge only (not data)?

Thanks

Make sure to get a cable that supports data transfer or it won't actually work for Carplay. I've had good luck with Anker cables from Amazon, but I'm sure there's lots of others too - as long as it supports USB 2.0 (480Mbps) data transfer speeds you should be good.

Consider getting a wireless CarPlay adapter. My current car has factory wireless, but my last car I used an adapter and it worked fine! Lots of them out there, typically around $99.
