i see that there are some usb type c headphones available for sale and I was wondering if these two work with the latest iPad Pro models. Or if the port only works with external monitors and a few other things.

I’ve plugged in just about anything to my iPads usb-c, and it works lol. Never tried headphones though. I bet they do work.
 
Well Apples usb-c to 3.5 dongle works for headphone audio so I don’t see why these wouldn’t work. The dongle is cheap and really small making it the easiest and cheapest way to use currently owned wired headphones.

I use the Google Pixel USB-c headphones and they work and sounds great. They feel a bit like AirPods to me. The volume control buttons and middle button also work which is a bonus. I’ve just ordered another pair as a backup. You can find these headphones for sale on eBay or other places for cheap too with a lot of people selling the ones that came with the Pixel phones.
