You may install Mac OS X 10.11 El Capitan (as well as other versions) to an 8gb or larger USB stick by following the instructions provided by Apple here: https://support.apple.com/en-us/HT201372 These instructions go back to El Capitan which is the latest release officially supported by Apple on your 2008 Mac Pro. You can get a copy of the El Capitan installer dmg from Apple here: https://support.apple.com/en-us/HT206886 or here is the direct link: http://updates-http.cdn-apple.com/2...cf50-4516-9011-228c78eda3d2/InstallMacOSX.dmg you'll need. Installing El Capitan from a DVD is possible, but it's difficult and I wouldn't recommend it.

That gets the disk image that you downloaded, copied to a USB drive. But, before wasting your time with THAT copy, follow the directions about using the "createinstallmedia" command in the terminal. The steps for what you need to do are on this Apple support page.
