Use iPhone as an iPod Touch

If I buy an iPhone but discontinue cell service, can I use the iPhone as I would an iPod Touch? Seems like I could but maybe there's a catch. I've never owned an iPhone.

Yep, you need a sim card to activate an iPhone, but once it's active you can always take out the sim and use it as a wifi only device.

That's incorrect. FaceTime and iMessage will work over Wifi. I have a 6s Plus, using wifi only and it works both ways with iMessage and FaceTime. It obviously has to be an iPhone to iPhone.
