Sorry I'm a bit of a graphics noob.

If I want to use 2 monitors (both 1920x1080), what model do I go for?

I'm not sure if it uses the GPU, or the processors.. or both to power both screens? :eek:

Any of them should be fine. I'm using dual monitors on the Mini Server and it works great. Prior to this model I also used the same monitors on the older generation Mini.

Whichever you like will work just fine.

It's not quite that cut & dried...

Both machines have graphics subsystems. One uses a discrete chip, separate from the rest of the chipset, to provide faster graphics. The other uses an integrated solution (in the case of the Core i5/i7 processors, it's built-on to the processor die itself; other machines have it integrated in to the controller chipsets) which isn't nearly as fast but gets the job done if you don't need top-speed graphics capabilities.

Bottom line is that machines with discrete GPUs will have faster graphics than machines with integrated GPUs. But either Mac mini will run two displays. And for 2D/office-type functions, they're otherwise similar.
 
These monitors are awesome ips/glossy and they are just amazing. I have 2 of these I use on mac mini server, just use HDMI to one and your DP-DVI converter for other. I do a lot of coding and can't stand matte monitors. As a graphic sob you'll appreciate 82% of color gamut.
