Hello, I currently have a jailbroken 5s 7.0.6. I want to let my wife use the phone however she wants her "backup" on the phone. Can I just plug it into itunes and click on back up from and select her backup? By doing so, it will remove my info and put her info onto the phone? What about all the cydia tweeks/apps/downloads? Will all those remain intact? I want all the jailbreak stuff to remain on the phone. Thanks

Yes, make a backup of your wife's phone. And on yours, hold shift and then click restore from backup. Select the backup for her phone
Your tweaks will remain but the settings for the tweaks may have to be set again
The apps may have their data wiped
