So....I have these two working hard drives from my Vaio laptop (win 7 x64) whose video card died. They are RAID 0'ed, so I can't just pop them into my hard drive dock and see the files.

Is it possible to use the iMac to boot into the RAID'ed drives and get the files? Like not booting into OS X, but actually holding Option on boot, etc, etc?
 
Unlikely, RAID tends to be specific to the manufacturer so you can't use another controller to read a RAID set. RAID is pretty incompatible...
