Would it create a bottleneck in speeds in using an older Time Capsule that has 802.11n to extend my wifi network where my current Time Capsule is 802.11 a/c as well as all my devices?

Would there be a way to set up the old time capsule in a way that amplifies my network without causing a speed reduction?

Depending on the workload, yes, you will see reduced speeds using the 802.11n access point. I would not recommend "network extenders" of any kind in 2018--either hardwire downstream access points to the LAN using the same SSID (but different channels) *OR* buy mesh access points to ensure adequate coverage.
