I'm curious of others experience with this..

I've usually used Safari to browse the web, and I've noticed lots of hang-ups and a very slow experience with Sonoma betas. On the other hand, Microsoft Edge is VERY fast and stable. Ordinarily I wouldn't consider Microsoft is something usable, but I'm quite impressed. Their ChatGPT integration is what had me try in the first place

Has this been everyone's common experience with Safari? Pages also continually 'run out of memory'.. it's just a mess

Sure hope the final fixes up Safari a bit!

Have you tried Brave? Like Edge, it is built on the Chromium base, i.e., ungoogled Chrome, without the user tracking or data mining Chrome employs, but unlike MS Edge, it gets updates quickly (hit the about Brave menu to check). For example, Brave is now on version 117.0.5938.88 while Edge is still on 117.0.5938.63.
https://github.com/brave/ hit the blue brave-browser top left, then the blue Latest lower right to see a long list of versions.

Yep, I have.. and it's a good browser in the same family (Edge has pretty nice AI tools, the only reason I installed it also)

However, my question is really about Safari. Before starting on the beta runs this year, Safari was just fine.. I'm curious if everyone else has gone through issues with Sonoma's Safari as I have?

I'm on the release candidate of Sonoma, and Safari is fast and stable. Better than Ventura, certainly. No problem with Pages either. Sometimes, problems aren't because of a new OS, even if they start when you install it. It could be cache problems, some long-forgotten software installed that's interfering, or who knows what. On the other hand, betas are betas.

Vivaldi is an excellent alternative browser.
