Using SSH to backup iPhone a good idea??

The title pretty much says it all. I want to back up the things that itunes does not back up, like the apps and such. Would backing up the apps folder using ssh be sufficient? i dont know if some apps install things in other places that a simple drag and drop wouldn't get.

I did it for my ROMs, Themes, and Customize images. Worked great...
