Today im using Monterey 12.6.9 on my 2010 Mac Pro 5,1 (dual x5690 / 96gb ram / 512 nvme psi-e / Radeon VII) with
@h9826790 Martin Lo's OC package.
but, as I work with video editing, I always need my machine up to date to be able to use various softwares and plugins, such as Adobe CC.
Is there anyone here using Mac OS Ventura on a Mac Pro 5,1 without any problem?
There are some special procedures I need to take to get my Mp running Ventura properly?

It highly depends on what hardware (including accessories) are you using. And your workflow etc.
Even I myself still using the cMP with OpenCore, but I somewhat agree with avro707. If that's your production machine, and you can't afford any downtime. You better look for a newer hardware.
Any software / plugin that require AVX cannot run properly on the cMP now. And even OCLP can patch the system files to avoid AVX, but it won't patch the software you use. (This is why I said highly depends on your workflow)
If you know your hardware and software very well. Then you should able to make cMP run Ventura stably with that particular hardware + software combination. However, since you said you have to keep updating the software, this make us no way to predict if your cMP can run Ventura + that latest software stably in future. Academically, any single update (macOS or your video editing software / plugin) may de-stablise the system, of even put it into an infinite crash loop.
We may able to make the older Mac to run newer macOS. We can make it work, but only up to the existing hardware and software. No future proof can be offer.
If you have some spare time, and really want to avoid buying a whole new machine, may be you can get yourself an extra SSD to install and run OCLP Ventura, test it if stable enough for you. But please don't expect too much on any future update.
AFAIK, the latest FCP and Compressor already won't work in Monterey. The cMP is really approaching its end of life, especially for production use. Even it can run Ventura after apply patching, and it can still run the latest software you need today, you still better start to plan how to transit to your next production machine.
