I would like to encrypt my usb stick with veracrypt formatting with the exfat file system so I can use it on Windows as well to decrypt the encrypted file container.

I can install Veracrypt on my own MacBook, but what if I need to decrypt my usb on my friends MacBook for example? Does that mean I need to install Veracrypt on his MacBook in order for me to mount the encrypted container to access and decrypt my data?

Is there a portable version of Veracrypt so that I can run it from my usb stick in order to mount the encrypted container on a different MacOS machine?

I don’t see a download called VeraCrypt.app.

I just wish to run Veracrypt directly from my USB stick in order to mount my encrypted Veracrypt file container.

How can I do this?

The VeraCrypt_1.25.9.dmg contains VeraCrypt_Installer.pkg that installs the VeraCrypt.app into Applications. You can copy the app from there.
But again, it will not run on another Mac without macFUSE.

Ok, I downloaded Macfuse. Then ran the Fuse installation on my MacBook. Now I see that as well in the Applications folder in the Finder. Should I also copy the FUSE application to the USB stick as well and then that would let me run Veracrypt in portable mode directly from my USB stick?

No, because macFUSE does't only install an app, it installs and needs all these files

You have to install the macFUSE package on every Mac you wish to run VeraCrypt.

Or to make life easier, I can just create DMG encrypted image container from Disk Utility.

Something wrong there. The macFuse installation does not put anything into /Applications. The installation adds a Preference Pane (i.e. it is in System Preferences).

The best way, in my opinion, is to use password protected zip files. They can be opened on Windows and macOS without any third party software, directly from Explorer in Windows and with the Archive Utility in Finder https://support.apple.com/guide/mac-help/zip-and-unzip-files-and-folders-on-mac-mchlp2528/mac
For creating password protected files
on Windows you can use 7-Zip https://www.7-zip.org
and on macOS you can use Keka https://github.com/aonez/Keka/releases
