Verizon is not in charge of iOS updates.
The latest stable iOS version is 10.2.1, the latest beta is 10.3 beta 7.

Verizon 27.1 (iOS 10.2.1)

Verizon gets the same iOS updates that every other iPhone gets. iOS updates are handled and distributed by Apple, not carriers. Now the carrier version is different, and been posted a few times in this thread. I'm on iOS beta 10.3, but I believe normal version 10.2.1. If I'm incorrect, someone will chime in with the correct one.
