I am looking for a video player that allows you to shift the image vertically. I play movies on a projector and am missing such an option. I would like to be able to move the image down.

There are several players on Windows that allow this. On macOS, none of the ones I tested have this option. I should add that cropping is not the solution.

Any ideas?

"--video-pan-x=<value>, --video-pan-y=<value>
Moves the displayed video rectangle by the given value in the X or Y direction. The unit is in fractions of the size of the scaled video (the full size, even if parts of the video are not visible due to panscan or other options).
For example, displaying a 1280x720 video fullscreen on a 1680x1050 screen with --video-pan-x=-0.1 would move the video 168 pixels to the left (making 128 pixels of the source video invisible).
This option is disabled if the --no-keepaspect option is used."

"--video-align-x=<-1-1>, --video-align-y=<-1-1>
Moves the video rectangle within the black borders, which are usually added to pad the video to screen if video and screen aspect ratios are different. --video-align-y=-1 would move the video to the top of the screen (leaving a border only on the bottom), a value of 0 centers it (default), and a value of 1 would put the video at the bottom of the screen.
If video and screen aspect match perfectly, these options do nothing.
This option is disabled if the --no-keepaspect option is used."

I think IINA and MPV both seem to do the trick, I haven't played around with editing the config file yet, it's a bit complicated. So far I've noticed a keyboard shortcut in MPV (alt + cursor down / up) that moves the whole image the way I wanted in fullscreen mode. In IINA you can change the keyboard shortcuts in the settings to the default MPV ones and then they work the same way (didn't know that!).

The only thing I would like to improve is to be able to move the image by less pixels, because now there are only a few levels of movement there. Do you think this can be changed somewhere?
 
In IINA, you can duplicate the mpv Default configuration (Settings - Key Bindings) and edit to
add video-pan-y 0.01
add video-pan-y -0.01
