I want to use an iPad as a monitor while taking photos/videos. How much of a difference in screen quality, colors, brightness, etc. are there between an iPad Air 2 and a first gen 9.7 iPad Pro?

Not much. Both are laminated with similar colour reproduction.

Incorrect - ipad pro 9.7 display covers the DCI-P3 colour space so has a wider range of colours and also covers a larger percentage of AdobeRGB.

Photos shot and tagged as sRGB won't see any difference as both cover that colour space. If photos are adobeRGB which is also very common in cameras - the ipad pro 9.7 will be much more colour accurate.
