Is there anything in their terms and conditions about this. I've been approached on a project for a company but the game has violence and drug references in it. I would rather not work long on a project just to have it never make it to the store. I know they can always reject something but is there something specific in their agreement about this?

Yeah, read the SDK agreement, section 3.3.12. No obscene, pornographic, offensive, or defamitory content of any kind, or other content that might be deemed objectionable by Apple. (I'm paraphrasing, but this is essentially what it says)

On the other hand, if you're getting hired by some company to do this, then you're already getting paid and it doesn't matter if the app gets rejected by Apple, right?

Well yes but I don't like to work on stuff that I know is never going to get released...
