does anyone have experience virtualizing photoshop? if so - have you found it to run very slow when virtualized? please relate experiences and what virtualizing software you used.

Photoshop doesn't require direct GPU access so it should run perfectly in a VM. If you have CS3 then you can probably contact Adobe to swap to the Mac version, but earlier releases will likely run faster in VMware.

why specifically earlier releases? not cs3?
