Vista x86 or x64 version?

In the boot camp user guide on apple.com it states that you should not use the 64-bit version of windows vista.
Must Use 32-bit Windows with BootCamp
64-bit version of Windows do NOT work with BootCamp. A couple of the drivers and required services will fail during install if you're using 64-bit Windows.

Not strictly true. Vista x64 is supported in boot camp if you have a recent MBP or Mac Pro install CD. The required drivers are included on that disc.
I am running Vista x64 on separate hard drive boot camp partition and it works fine. All necessary 64 bit drivers are on the Mac Pro install DVD #2. Sees all 16 GB RAM. Runs FSX wonderfully. It wasn't terribly hard to set up.
I've been running Vista x64 for about a week. All the drivers work. And I have not had any real problems with any apps incl. Office 2007, Visual Studio 2008, Photoshop 7, VMWare Workstation 6, VB6 WinRar, and loads of utilites. One thing to note is that VMWare's fusion does does not support running the Vista x64 bootcamp partition. I did get it to work with some hacks, but it was a bit to slow and many of the x64 fusion drivers were missing. Hopefully this will be addressed in the next version.
Also note, if some apps crash when starting, then you may need to add them to the DEP Date Execution List, or turn DEP off. DEP is in System Properties>>Performance, (I'm in OSX at the mow, and I cannot remember the exact location

Definitely 64bit for games, its just as fast as XP is in that area. If not games then probably 32bit so all the crappy freeware stuff is more compatible.
I found games to be slower in Vista regardless if its 64 bit or 32bit. If you're running a game optimized for 64bit, then you'll see an improvment, otherwise, its sometimes slower.

These days they are pretty much the same. The reason I would suggest 64 is because Crysis has a 64bit version thats faster than 32bit and more future games will have 64bit versions so its good to future proof yourself.
Some games perform a little slower in vista but it looks like a good majority of them are basically exactly the same. Vista has come a long way since it was released a year ago.

can someone clarify if the only difference between the 32 and 64 bit versions is how much ram is available?
I have noticed on windows xp 32 bit that only 50% of the cpu is used maximum. I am guessing the 64bit windows would unlock the other 50% since it is a intel core 2 duo??

I'm not sure how available XP Pro x64 drivers are for a MacBook Pro. I have a new Mac Pro and I found the XP Pro x64 drivers pretty easy to find and install. If you do install XP Pro x64, make sure you have the ethernet card driver ready so you can use the internet to find the other drivers!
