Just wandering,

I am looking to install windows on my 2.0Ghz Macbook (Late 2007)

It has 2GB of RAM and 250GB HDD. Firstly, would it be capable of running Vista Home Premium?

Secondly, I've heard from some people that it is hard to install any Windows version if using an OEM copy. Is there any truth behind this? The OEM disks are so much cheaper I have found, but I do not want to be finding myself out of pocket if they are prone to not working.

Yes, you can use an OEM version
