I wanted to use VLC to edit, trim, convert and capture video. I am running a Mac M1. I downloaded VLC version 3.0.21., because I liked the features shown on the youtube videos. However, the MAC version does have any of the features shown on the Windows version. Am I missing something or WHAT?

The conclusion is self-evident - for MAC version of VLC is cut down, but for Windows it is not )))). Use Windows or alternative software.
The question is different, and why did you look at the version of the program and its functionality for another operating system? To what?
The second option, download the program from the official site of the developer, not through apple store - there the functionality is not cut.

Movavi Converter is a very good program, I used it in my time, when the license was still on disks. It is very convenient, but there is a small problem with the speed of processing and saving. If you open another program that uses the video core chip, the program increases the processing time.

I agree with you, this is an unpleasant surprise and disappointment.
I use the following programs: Adobe Premiere Pro, and for the camera Arri - DaVinci Resolve

AVIDemux has all of these except capture ability.

You can do some of that with QuickTime Player -- I've used it for trimming and exporting.

VLC Is more powerful of course especially as far as converting/transcoding to other formats. As far as I know the Mac version (as downloaded from VLC's website) has all the functionality of the versions for other platforms. I don't find their UI intutitive at all on the Mac but wasn't sure that a Mac-specific limitation or just the way the VLC people like it.

to edit and trim videos VLC is not a first choice. iMovie free Mac app can do it for you easily
