I was just about to purchase a Wacom Intuos3 but today Wacom released a new line of their Bamboo tablets with touch technology.

So, my question... would adding touch capabilities enhance my experience? (instead of using keyboard shortcuts, I can zoom in/out, etc.)

Some say that Bamboo offers enough pressure points for photo editing and since I am not an artist, I wonder if I will notice the difference between Intuos and Bamboo?

Any insight is welcome.

No, I don't think you'll notice any difference.
 
You probably won't notice the difference, but the Intuos3 offers 1024 levels of pressure sensitivity, while the Bamboo is 512 levels.

I have a bamboo (a few years old) for photo editing. It works fine. The intuos may be better, but as I am not getting paid for most of what I do, I can't justify the increased cost.

I didn't know about them adding touch, but I will seriously look at a new bamboo if they have that working well. I typically work with the tablet on my lap and laptop on a table in front of me. Being able to use the tablet to easily zoom/move would be great. My bamboo has the small circular touchpad, but I don't like how it works.
