Want to upgrade then unlock again...but

Hey all,
Im using a 1.02 at the moment already unlocked.

I want to restore, update to 1.1.1 and then jailbreak and unlock again, however, when I restore the phone, will it erase all of my contacts and pictures and so forth? Music, Movies etc?

When I restore, my Rogers sim will no longer work, will this pose a problem to try an upgrade to 1.1.1 with no sim card?

I suggest you follow the above guide(s) to upgrade an unlocked iphone. Directly restoring an unlocked iPhone can cause problems.
