I want a Mac Pro 5,1 thats immaculate but so far everything I find on eBay is in awful condition or asking unreasonable prices. Has anyone had any luck elsewhere as of late in getting a decent 5,1 Mac Pro in good shape?

I just looked and there are a bunch of recent 5,1 sales on Ebay for $500-$600 range. That seems reasonable to me, so I'm not sure what you are expecting.

You can try Craigslist for local offers. Of course any great deal will be gone quickly, so you'll have to keep an eye on it frequently.
 
I've sold two upgraded 2009 Mac Pros on eBay recently. Just for pricing reference:

12-core 3.33 Ghz with flashed 7950, USB 3 card, and dual SuperDrives: $1300 (auction)

8-core 3.46 Ghz with Apple 5770: $1045 (buy it now / make offer)

Both had 24 (3x8) GB RAM, 640 GB HDD, delidded processors, and wifi added. Cases were in very good condition.
 
In fact, a NVMe SSD on the Mac Pro just make thing worse, because it's not bootable, and no native driver. My advice is to sell that separately. Putting an expensive but non bootable (and without native support) SSD in the Mac Pro is not a good way to ask for more money. In fact, I will prefer to save that $150 and ask you to take that away (if I want your machine). That SSD may be useless for me in the end (the 3rd party driver seems still not prefect at this moment, some crash may happen). Also, the Angelbird card is overprice at the very beginning, there are plenty other lower cost PCIe adaptor can do the same thing. I know that card cost $75, but why I have to pay $75 for something that $20 can do the same job?

Again, I want to emphasis that I am not trying to make you angry. And I am not interested in your Machine. But I just want to let you know what I am thinking (in the point of view as a buyer), which may help you to get more realistic price, sell it away easier, and hopefully get as much as possible (e.g. sell them as parts, but not a whole machine).

If you are OWC, you may able to sell at that price (they selling a 2x 3.33 2010 5770 1T PCIe SSD for $2899 at this moment), because they provide warranty. And they are a famous seller. For individual seller, it's very very hard to sell a unit that close to that price.

That's what I am willing to pay for. I know the original price is high, but that doesn't mean that I have to pay the same cost for a used product. In fact, most of the time, you sell them in parts should get you more.

e.g. the 5770 may able to get you $150 or more on eBay, but that won't make your 5,1's price $150 higher.

Also, as a buyer, I don't really care if that's a factory 2x 3.33 or upgraded 2x 3.33. I only pay for the spec. Scott sold his 2x 3.33 sold for $1300, which is with an extra Super Drive and a flashed 7950.

Is the OWC Mac Pro equipped with 96GB of RAM? 16GB modules aren't cheap.
 
Just some info for you, what I am willing to pay

$400 for the Mac Pro (no more than $600 in any case)
$300 for CPUs (no more than $500 in any case)
$400 for RAM (no more than $500 in any case)
That 5770 worth nothing for me, but I may pay no more than $50 for that in any case
Used SSD worth not much for me, and the new (and better) SSD price is dropping significantly, so, why I pay more for an old stuff? So, no more than $150 in total (including the Angelbird card) in any case.

That means, I am willing to pay only $1100 for this Mac, and no more than $1800 max (e.g. if I really need it in short period of time, and somehow, this Mac perfectly fit my needs) Of course you can ask for $3000, all I can say is good luck!

But not that expensive either, I just check the page that I obtained my current 3x16G RAM. I can get 6x16G (new) for less than $300 now. In fact, I don't know the RAM is so cheap now, what I said $400-500 is way above what I should think about.

(If the link lead you to an app, please forget about it. It's a Chinese website called TaoBao, a single 16G DDR3 2Rx4 ECC 1600 (backward support 1333) stick only selling ¥315 (Chinese Yuan). I am using this RAM now, so 100% sure it works well in cMP.

Again, what he paid for is one matter, I am only willing to pay for what worth to me (at the current market price). If I can get the new RAM for just $300, I don't think that I will pay anything more than $250 for used RAM. In fact, I will only count $200 now if that's a part of the whole 5,1.

The reality is this machine's value is going down (quick) now. We should not stay inside our own world and keep telling ourself this thing worth how much and how much, a simply search can tell how much it actually worth now.

I tried for a while and eBay just didn't turn out to be a particularly good source. I got mine from a local advert on Gumtree in the end, the price was reasonable and I was able to have a look at it without committing first.

To the sub-point about SSDs, I have an SM951 in mine as the boot drive; it's extremely good but not night and day transformational in the way that moving from HDD to SSD was.

Depending on what you want to use it for you may also want to be flexible on processor specs; I think the 6 core is generally seen as the sweet spot in terms of speed vs cores but I ended up with the 8 core 2.4. Not a speed merchant but fantastic for Handbrake etc.

Also don't worry about RAM, server pulls on eBay are now extremely cheap so I've upgraded to 48GB using 8GB sticks

His service was good and most of his machines are in nice conditions. You might want to inquire and check. He cleans up the machines and tests it for 24 hrs before selling them.

I purchased my 5.1 2009 Mac Pro from this person a while back. It was as advertised and a minor issue( a missing fan casing screw) was sent to me plus phone support. He's an honest seller.

Yeah, just check that link work. The price will go up and down a bit, but there are 11 shops selling this RAM at or below ¥330 at this moment. So, ¥330 = US$ 50. And 6x50 = 300, so, for me, that used 96G RAM only worth at or below $250 in any case now. Because I can get them below $300 (new).

All of them able to run at 1333MHz 2Rx4 1.5V ECC. Some of them are 1600MHz, some of them are PC3L, but that does't matter, and all of them are 2Rx4, the 4Rx4 stick is even cheaper (¥280), but not recommended for cMP, so I didn't count them.
