Yep after that Apple started to take stuff out! I guess with the Smart NAS makes taking off and very low sails they decided to ween themselves of Server! Plus sense by 2010 Microsoft Sever start natively started support other companies including Apple Machines! To me that put a nail in Sever for a Tim Cook’s Apple!
I'd say Snow Leopard was the last true version of Mac OS X Server. If I recall correctly, you could actually run a basic Active Directory Domain Controller from it. Snow Leopard in general was one of the best releases of OS X/macOS.
If you want a server with a GUI, Windows Server is pretty much your only option these days and it is still very full featured.

Unlike Apple, Microsoft makes a lot of its money based on Windows server and related products in the enterprise. To them, the server isn’t just an added cost but an ongoing investment.
Microsoft had 'Home Server'. I don't know if they still sell it, but it had a lot of stuff taken out, and hooks left as if it hadn't been. They also had something like 'basic server', or 'essentials', and it was interesting what they didn't consider essential. For Microsoft Server, it seems go big, or find out things are missing that you might need/want...

Well, for uninterested home users there’s always Synology, and for people who care you get actual pro functionality at no monetary cost if you set up a regular Linux server to do what you need.
