Hello someone please help! In short... My phone has not downloaded the latest version of watchOS and now my phone and watch won’t talk to each other!

Ive just bought a brand new Apple Watch series 4. I charged it up for a coupe of hours before I started to pair it with my phone. Once this was done it notified me it required a software update. As this is my first Apple Watch I wasn’t familiar with what the latest version of watchOS is, so I just started to download it and left it going overnight as it was taking forever. The next day I tried to continue the setup but when it got to the screen where is says trying to connect, it would just stick in this screen. I left it 20 minutes then turned everything off and started again. So I pared, checked for a software update and it said I was up to date running 5.3.6. It wasn’t until I rang Apple support that I realised that the latest version of WatchOS is currently 6.2.1.
I was on the phone with 2 people for an hour trying to restart, reset, do this in that order but nothing. They suggested trying to set it up on another iPhone but under current circumstances I can’t do this.
Anyone ever heard of this? My phone software is up to date. I’ve reset network connections everything. Apple stores can’t reopen soon enough :)
 
I would unpair your watch by going the the Watch App on the iPhone, click on the watch and then the I with a circle around it. Unpair the watch. After the watch is unpaired, Power off the watch and the phone. Power up the watch and the phone and try the pairing process again. After the pairing process is complete try to update the software again on the watch.

What OS is your phone using? To use watchOS version 6, you need to have an iPhone 6s or later running iOS 13 or later.
