I used to be able to find this information on the watch app at: General-> Usage->.
This showed data used by installed app (which can now be seen in "Storage" tab.
It also displayed hours since last charge and a metric for how much time the watch was used.

Has this information been relocated? I know battery can be checked for some of this information but its not as detailed.

Have the same question. Surprised no answers.
 
In case of any uncertainty about the missing info, these are what don't seem to be available in watchOS8:
