Hi, and firstly, apologies for what must be an extremely obvious question to those who know design!

I was wondering how you create "3D style" web icons / graphics; similar to the ones used on the Checkout App website (the iMacs, scanners, receipt machine, and the Checkout icon itself)...?

I know there are icons available from websites around the Internet, but I would quite like to have a go at making them myself - is it done simply via Photoshop (and similar) or is there a specific app that might help me?

there's a great little app called Art Text that should do what you require. It's available as part of the macupdate bundle.
 
What you are referring to are most likely made in photoshhop or illustrator. Google a tutorial on 3d buttons or icons, or glass buttons and look for a good explanation. Once you understand the visual concept, it's not hard to do it yourself.
