Can anyone explain this?
Was this just last night? I had the same thing happen and thought it was very strange. This morning it asked for my password because it had restarted (which was not something I had done), and when I looked at the battery info it showed it had apparently shut off/restarted a little more than an hour into charging. The battery level picked back up about 6 hours later, presumably when I entered my password. My charge profile looked very similar to yours. Never seen it before.

Yes, just last night. Before that the profile was normal. And I had to enter my password this morning, too! On mine it looks as though the phone continued to charge up to 100%, even though it doesn't show any green bars.

I am using the newest Belkin 3-in-1 charger. My watch was on the charger at the same time. This is what it looked like.

Do you have automatic software updates activated? Did the iPhone update to iOS 15.4.1 by itself maybe?
No, it happened before the update came out. Also, I have automatic updates turned off. The charging profile has been normal since that one weird one on Tuesday night, before and after the iOS update.
 
For me it looks like a charger fault or power input to charger was somehow too low to charge the AW but low enough to not drop the charging (i.e charged with 0,5A and consumed 0,8A ).
Saw this multiple times with android phones with GPS on where charging current was not enough to charge and keep gps operating :)

Interesting. Were you charging wirelessly? Maybe it was overheating? I've really never seen that.

I was charging the iPhone, along with my Apple Watch on the newest Belkin 3-in-1 Wireless charging pad. I did not notice any heat when I took it off the charger in the morning.

I was charging the watch and the phone at the same time. During the "gap" in the phone charge display, the phone appears to have continued to charge; it just didn't display that.
