Sorry for the vague question, but what benefits can we actually see by having an iOS device with Apple's A-series chips (A11, A12, upcoming A13) which have the neural engine?

I'm still on an A9 iPhone, so I don't yet have neural engines in my CPU.

What am I actually missing, and from which apps?

I think you aren't missing much. The only time I saw a huge difference was when I upgraded my iPad from the Air 2 (A8X) to the new 11" Pro (A12X): the new one is much faster at recognizing faces and objects in the Photo library. I was really surprised how fast it scanned through the photos, but, however, that's the only time I saw a benefit.

One of the benefits is for image recognition using machine learning, also speech recognition. Those tasks can be executed much faster using the neural engine than just running on the main CPU.
