I am backed up on an external drive and have the beta ready to install. What is the worst case scenario I could encounter here? I am very curious to see the new OS, but don't want to not be able to do basic things like access my email, contacts, etc...

You could lose all your data. If you know how to restore your computer should there be a problem, then you should be ok. Just know, that not all programs may work and something could go wrong that is unforeseen, that you aren't able to fix without some work. If that doesn't bother you, feel free to install. The fact that you asked should tell you maybe you should wait.

I know I probably should wait! I love betas though and testing out new things. So hard for me to say no. But I should...
