Preferably ones that get updated regularly. It's become kind of a hobby of mine to follow this stuff. So far I have MacLife and Cult of Mac, along with MacRumors as far as news/blogs that I check on a daily basis goes.

daring fireball, Loop Insight, iMore, 9to5Mac, Parislemon, marco.org, Ars Technica also has a good Apple section...
If you're into the business-aspects of Apple, Asymco.
