And why?

Here's mine.

Measures (a currency, weights and measures tool) - I travel a lot for work so this is invaluable when I'm outside the country. Cost: .99

Gamecenter - This one is brand spankin new but I'm a big video game dork and I've been on this one daily since I downloaded it. Game specs, cheats, game controls (great idea!), news, reviews... blah blah blah. Cost: Free

iEmoji (emoticon app) - I downloaded this one about a month ago and love it. The emoticon library is great. Cost: .99

Weather - Another daily use app so I know how to dress. Cost: iPhone stock app

Facebook - Almost daily I'm embarrassed to say. Cost: Free
 
For me, Remember The Milk is an integral part of my daily life. My memory is appalling, and I always used to forget stuff, both in personal and work life. Since I started using this service a couple of years back (before the iPhone app existed), it's totally turned things around, and I'm actually pretty productive now. My job is very task orientated and having a good GTD system has really worked for me. The iPhone app is superb and simply makes it even easier to quickly jot stuff down as it occurs to me. There's also now a plugin for Google QSB on the mac for quickly firing stuff off to my lists when I'm at my computer.

Other apps I use on a daily basis (other than the obvious Safari, Email etc.) are Tweetie, Facebook, Newsstand (Google Reader RSS app) for obvious reasons. Documents to Go for doc/spreadsheet editing, DropBox for accessing files from the cloud (synced to my documents folder on my mac), FFM 09/10 (fantasy football management), Strands (for logging my runs and bike rides), and lastly Hitchhikers Guide to the Galaxy for my nightly reading fix :)
 
- LogMeIn Ignition (So i can keep my eyes on my computer while it's downloading torrents.)
- iCamMobile (Web browser that have a powerful word search that no other browser i've seen. Better then Safari.)
- Multi-Full Web Browser (I love watching multiple websites at the same time and very useful for a copy paster like me.)
- iManga Reader (Read thousands of copyrighted mangas for free.)
 
in no order

things- i am also horrible at remembering things. it syncs with my mbp as well.
newsstand- must get my google reader fix on the road
kindle/stanza- i read more on my iPhone than i do standard books nowadays
facebook/tweetie- social networking is an obsession hah
wikipanion- for quick and wonderful wikipedia look ups on the road.

and one apple app that i use more than most people i think

Clock- I take short naps through out the week, and this is my GO TO app for the nap..
 
Echofon - gotta stay on top of my tweets :D
Clock - like a previous poster said, I take daily naps - this is a must have! :D
Simplify - stream my iTunes library - has been extremely reliable :D
Wikipanion - when I get bored, I Wikipedia things :D
 
[app]Pocket Informant[/app] - event and task manager. Syncs to online services. Monthview timebars make seeing my schedule easy to see.

[app]Active Money Pro[/app] - Finances. Quick entry. Great graphs. Budgets.

[app]Tweetie[/app] - Follow app developers.

[app]Wisdom[/app] - Japanese-English dictionary. I live in Japan.

Weather - I live in phoenix, to see how hot its going to be!

Calendar - Check on time to be at work (changes daily) and wifes goings on (we sync calendars with mobileme)

Facebook - because my life is boring and i like to see what friends are doing.

Twitbird Pro - because my life is boring, follow others...

Brightkite - to post location to twitter and facebook.

Sportacular - keep up to date on scores.

USA Today - News

FreeMemory - to free memory when iphone running slow and check battery %

those are my daily use apps, I also use many other aps fairly regularly, like stocks just to see how the market is doing and read some apple news articles. maps is quite handy as well to check traffic flow and to find places. Gas Cubby to keep track of gas mileage and such, eBay app to watch stuff i wana buy or stuff im selling. Wootwatch is checked daily.

and of course iPod app! music, movies, tv shows, videos, etc...
