Internet/mail/blogging, iTunes, word processing (usually in Pages).
Once a week - audio editing (Garageband) and photo organizing and fixing.

I would like to use my MBP for Camera RAW editing, but the screen just doesn't cut it, and both Aperture and Lightroom won't allow me to work in sRGB workspace, so I have to resort to Capture one pro on my XP desktop to do my processing workflow.

What do you mean the screen doesn't cut it? I'm surprised you would have to resort to working on a XP desktop to get the job done. I know alot that do professional photography and have yet to touch a PC for anything.
the screen on a MBP is nowhere near good enough for "proper" color correction and print work. i use a MBP and hook it to an external monitor for that sort of thing.

My MacBook Pro stays pretty busy. I did purchase it primarily for photo editing. I use the following almost everyday:
Photoshop, Bridge, Lightroom, Skype, Adium, Handbreak, MacTheRipper, Office, iTunes, VLC, Firefox

Web browsing, email, adium, word processing, translating languages, music, sometimes movies (prefer TV for that), Handbrake and likes, photo editing in aperture/photoshop, rarely video editing in Final cut pro/Motion, also, iWeb/dreamweaver for my site and some GarageBand when I feel like making music

For work I use the vmware fusion on it.
I nearly bought another macmini as a media centre but thought I would save the cash and instead just use the macbook to play full 1080p movies through my 47" HD LCD. its great, its connected via DVI-HDMI and also use the optical out of the Macbook to give full 5.1 sound.

My MBP gets used for Internet, email, iTunes, syncing iTunes with my iPhone and 160GB Classic and that's about it.
Web browsing, email, graphics design, web development, and music. And sometimes the occasional game in my Boot Camp partition.
