I had my old Apple TV hooked to my TV via HDMI but also had the red/white audio outputs going to my receiver so that I could listen to music and not have to have the TV on.

Are there converters out there? How are you guys running your audio to receivers?

Not really a different format. Most audio now is digital and the optical output on the ATV is digital--so it needs to stay digital--or be converted to analog. So if you have an older receiver that can't handle digital signals, the signal needs to be converted to analog).
