I'm wondering what happens when your library of music exceeds that of a 4GB DVD-R and you want to back up your whole library of like 10gb or something.

Will iTunes ask you to insert a second DVD-R and a third until your whole library is backed up?

Yes - that is exactly what it does - I have backed up my library (56GB) in this way - you just follow the prompts and keep on loading new DVDs as it asks for them.
 
Why not buy a 8.5 dual layer dvd? Or burn it to a bluray disc like me?
