since they are less than 14 days old, do they still go through the standard refurbishment process?

They will be turned into certified refurbs by apple. Once a new phone is returned, they are never resold as brand new.

Not sure what the actual refurbishment process is like though, does Apple just wipe everything clean? Replace the battery? Apply fresh oleophobic coating? Either way I doubt they’d replace the entire logic board, so refurbished devices probably have some level of read/write wear on the SSD already.
