I'm sorry if this has been answered, but Googling and looking through the forum hasn't seemed to answer my question.

How are all the songs that don't have a match and aren't in the iTunes Store handled? I can put them on iCloud, but what storage is this being counted against? My free 5GB that Apple gives everyone for iCloud?

The way I read it, iTunes match doesn't have a GB limit -- only a number of songs limit, which is 25,000.
Unmatched songs are uploaded as-is and count against the limit.
Matched songs that weren't purchased from iTunes also count against the limit.
Any songs that were purchased from iTunes do not count against the limit.

Correct. The 5GB is for documents, email, iOS backups, etc... Photo Stream nor iTunes Match count against that limit. Photo Stream's limit is 30 days/1000 photos and iTunes Match is 25,000 songs uploaded or matched.
