Bose In-Ear TriPorts and Quiet Comfort (QC2) 2.

Yep, I use them, and love them. The TriPorts In-Ear are not the greatest sounding out there but they are the most comfortable in-ears I've ever used. And holy bejesus the QC2s sound amazing! seriously, is like having my $1800 Altec Lansing hi-fi speakers in my ears; well not the same, but close hehe :p
PS: Even though I don't have an iPod touch I have an iPhone and a 5.5G iPod so I can say with what headphones I replaced the original ones. I've used Sony, Senheisser, Koss, you name it, and against all odds those QC2 are my favorites. [I say against all odds because I knew I was risking $300 in this headphones and if I got something like the In-Ears (or other Bose products) for that price tag I would have gone berserk :p thank God I didn't]

Shure E3C - fantastic. Especially good on a plane because they cut out all the background roar. You can listen really quietly and so better for your ears too. Get them duty free if leaving the country.
 
I use the Skullcandy Full Metal Jackets. They are really comfortable and the sound is amazing... I love the fact that they block out other sounds. :)
 
I have been wanting new headphones, but didn't want to spend a lot of money on them. I read that some Touch users were happy with Skull Candy in-ear, so I bought some today at Target. They are on sale for $12.99. I have to say, they sound pretty good! I'm sure the $50+ headphones sound better, but these are a huge improvement over the stock headphones, plus they are comfortable.

Sony MDR-G42LP Street Style Headphones

I've always been a fan of these. I've been using them since I was 16 and I've been through 6 pairs of those and 3 pairs of the S2 kind up until now.

I'm using my trusty Professional Sony MDR-7506! Looks very retro but the sound is what counts! Love the overall balance and clarity...
 
Hey although I am using a combo of iphone and ipods I have gone for the bose triport cans for long distances, and for round town with the nano and iphone i use senn cx300 - although to be honest they are great and for the price really amazing but i wasn't blown away, although I'm probably asking too much for £20 headphones!:rolleyes::)
 
I just bought the Shure SE530. Very good but very expensive! Passive noise cancellation is terrific. I have no regrets, but if I did buy again, I probably would save some money and go with the Shure SE310.
 
Another Sennheiser cx300 user. Got them for around 50 on Amazon and I think they are good/great.
 
Hey guys I know this may seem lame for me to point this out but I learned the other day that if you use earbuds (like Apple's) and wrap it around the back of your ear instead of just sticking them in, they stay in really nicely and can be more comfortable. Just a suggestion for all of you that want the on ear headphones because earbuds go too far in your ear.
