I was just looking through the Manage section of Cydia and noticed that I have an app called Erica Utilities installed on my OS 3.01 JB iphone. I dont remember installing it. Perhaps it was installed with another app? Anyway, do I need this app? Can I uninstall it?
 
No I did not. The only JB apps I have is Backgrounder, Music Control, 5 Icon Dock, Kirikae, and SBSettings.

Go into the manage tab in Cydia and start the uninstall process for Erica. When you do that it will tell you what programs it will uninstall along with Erica (you can obviously cancel before you actually uninstall anything). Whatever is listed along with Erica is what caused Erica to be installed.

As stated, there are a number of apps which have dependancies on other extensions in order to run, therefore if you look on the confirm page in Cydia, it will list everything else it is going to install along with your selection.

And never remove anything out of Cydia as it will likely result in either a sad mac face (if you're lucky) or an endless reboot.

Best to just stay away from the idea of removing anything. Good thing you asked.
 
You can run apt-cache showpgk com.ericasadun.utilities in mobileterminal and get a list of everything that depends on it. I'm not real familiar with apt, I assume it only shows dependencies for repos you have installed.
