What is stored in 'other'

On the summary page of iTunes, it gives you a thermometer view of how much of what you have stored on your iPhone, but there is one category called 'other'. Does anyone know what this is? Mine seems to be growing. It doubled in size overnight, without any reason that I can think of.

I have tried a search, but didn't find anything about this.

The other part of the question would be, where on a PCwould this appear, and can any of it be deleted safely?
