GMAIL. It's the only free service I have ever stuck with this long that has only gotten better and better. IMAP on my Mac, iPad, and phone, labels and forwarding, spam control, etc etc. Storage is amazing. Rarely have an issue or need to visit the website to get mail. It's great.
I've had hotmail in the early years before it became overwhelmed with spam, yahoo mail before it sucked (it always sucked really), and I have mobile me for comparison.
I have both MM and GMail. GMail wins in the spam filtering department. In MM it's easy to make separate folders for various things (jobs, vacations, guitars, etc.) I can't figure out how to make folders in GMail that is similar to this. Does anyone know how?

Just create some Labels and then you can just drag your emails over them. Easy.

For delivery to mobile devices, I have liked Mobile Me the best. However... do not confuse MM with the need to use your MM address.
For the most part, I have my own domain and other email addresses. All of them forward to Mobile Me so that my mail is pushed to all of my devices and computers using that single MM account.
One other thing that I do is to forward (but not delete) all mail consolidated onto Mobile Me to a Gmail account that I only use as an archive of all mail that I receive.
Hence:
1) I have a dozen email address that all funnel into Mobile Me
2) I only ever check MM on all my devices (IMAP Synced)
3) MM forwards a copy of all consolidated email to a GMail archive for me

Just one question, how do you forward a copy of all consolidated email to Gmail ?
Now a copy of all your received messages will be sent to your archive email address for long term storage. You can log into Gmail if you ever want to get any message that you ever received. I have almost never need to do so... but it makes it psychologically easier to aggressively delete email because I know I always have a back-up copy. I like having a clean inbox... and I dislike having lots of misc folders.
- Create an archive email account (ex:firstname.lastname.archive@gmail.com)
- Log into Mobile Me email account using a browswer
- Click on the gear -> preferences -> general tab
- Enable email forwarding (enter your archve email adress)
- Uncheck "delete messages after forwarding"
