I see that Photos app have that option of deleting everything from the iPhone after importing.

What if you wanted to do the same on image capture? I think if I waited until the import is done a message pops up where it asks you if you want to delete all the photos in iPhone that has been imported.

But when I tried this recently I went away from the computer because there are about 6000 pictures and I wasn't sure when it was going to finish and couldn't wait for it. When I came back I found everything has been imported but there was no message asking if I wanted to delete the files that were imported, so it's still taking up a lot of space in the iPhone.

image capture is a management program that saves, edits and perform other tasks with images,
therefor the program is not designed to auto delete files after executing them.
years ago the the programmers at apple figures since the app is designed for computers which had more GB than a device and those would want to save images.
these images are not really saved in this program, but on the computer in different file formats.

What version of macOS are you using?

I recently upgraded to Big Sur and I have found what under every previous release, when I had selected the "delete after import" option, the images were in fact deleted from my iPhone. But since upgrading the images are not deleted. And I need to manually delete them. I suspect this is just a bug.

Then there should be an option to delete photos after import. I don't remember exactly where the setting was. Check the preferences. In the Big Sur version there it a circle with "..." in it in the window bar.
