What is the difference with these bands?

Apart from colour? material? Probably not function as they are most likely part of the strap securing mechanism.
One is rubber, the other is metal. I guess the dark ovals on the metal are softer material to cushion the contact. Rubber is already soft, so no need for a different material there. Just a guess, though.
From an engineering point of view as it's something I'm involved with.
These items will be a very good fit, but they cannot be a micron accurate perfect fit, that's just not realistic.
When you have a metal shaped piece sliding into a metal groove, it is was just metal it would move.
My best guess is these rubber pads are there on the metal ones to take out the slack that has to be in there.
Even if it's just 0.1mm there needs to be a little slack in the metal to metal join, and this will allow there to be metal slack, but also keep it a snug fit when it compresses as you slip it into place.
And I agree with what's been said, with a rubber to metal join this issue is not going to be there.

I hope so because i have thin wrists and i do intend to buy the stainless steel link bracelet and (depending on price) other straps/bands as well. Not having to go somewhere to have them altered to fit my wrist would be a VERY good thing indeed
Most likely the 2 outside tabs are spring loaded. When you insert the band the button pushes the center tab down a small amount releasing the spring and extending the tabs. To release you push the button in all the way and it releases the tabs and resets the spring.
I was thinking it was even more simple than that.
The center pad on the strap actually sticks out perhaps a millimeter or so (unlike is shown on these computer renders)
You press this in as you slide it sideways into the slot in the watch.
When it reaches mid way it finds the hole behind the button shown on the case, and pops up into the hole.
then you wish to remove it, you press the button on the back of the case, this pressed the sprung button down on the strap, allowing it to be slid out sideways.
This would work fine, but there are probably a couple of others ways you could do the same.
It's probably just metal and a spring and the pads whichever way it works.
