I would recommend “I Am” to everyone.

It provides constant positive affirmations throughout the day, straight to your watch.

I’m always feeling low (mental health issues) but this complication really helps.

What’s the number 1 app you would recommend to someone who wears an Apple Watch?

MultiTimer

You can create very intricate multi-stage timers of various kinds with it. I mostly use it when cooking recipes I know well and have worked out the perfect timings.
Thanks for that recommendation. Been looking for something like this for a while, but never found a watch app that could do repeatable sequenced timers.

I like Training Today. Gives you a score based on metrics including HRV (not sure what else) to help gauge how rested and how ready to train you are. Good to glance at, and it provides some indication that I find interesting.

Maps App. Very underrated, but I find getting Compass movements and POI around me very satisfying

Great for extreme athletes and runners 🏃!!!

Heard a YTer uses a similar app on his Apple Watch Ultra 2:

My most used third-party app on the Watch is ‘UV Index’. Its main feature is tracking your UV exposure and your risk of sunburn, based on the local, current and weather-adjusted UV index, your skin type and whether and when you last applied sunscreen. It also estimates your Vitamin D production.

It adds a decimal point to the UV index the built-in weather app shows (in the app and its complication), as well as offering an hourly prediction for the next couple of days on the Watch.

But apart from a more fine grained UV index shown in the complication, you can start and stop UV exposure tracking from the Watch app as well as log the application of sunscreen. This is particularly useful if you keep going in and out of shade.

You can of course just use the iPhone app version for the same functionality, but sometimes doing a few taps on Watch is more convenient than pulling out your phone. Or naturally, when you don’t have your phone with you.

Sleepwatch, it provides me real actionable insights on sleep and has basically fixed my sleep schedule on is own. But now I am cursed to wake up at the same time every morning with no alarm so one night out can really throw me off…

For third party apps, I only really use Spotify and Lyd (controller for SONOS sound bar).
I do use Strava on my phone but don’t bother with the watch app.

The clock
I usually have a close enough idea of approx. what time it is without looking at the watch, so for me the Timer is of most value, used constantly. Activity then day/date/time because I am often unsure what day/date it is. Alarms. Then Workout, Phone-on-watch, Camera Remote, Compass, Maps, Stopwatch, Sleep, Voice Memos and more. I have a v1 AW Ultra and love it. I had AWs for years and liked them, but I love the AWU.

The phone works great on my AWU (AT&T the provider, USA western states). I answer calls on it frequently, and folks tell me long conversations sound good from their end too. My friend has my previous AW and for her the phone sound is unusably poor. CarPlay works well on my current vehicle, so I no longer need to have long conversations on the AWU.
