I recently upgraded to macOS Catalina and I noticed there are 2 drives, one is the Local Disk (normal) and the other is the StorageSpace disk drive, which is exactly the same size as the Local Disk.

I don't recall having this StorageSpace drive in Mojave.

Can anyone enlighten me on what this is and how to get rid of it if possible?...It's empty inside and I can eject it, but upon a reboot, it reappears again.

Catalina automatically partitions the drive.
one is a read only system drive, the other is for your data.

I understand that feature. I already have a "Local Disk - Data". I was referring to this StorageSpace disk:

I haven’t seen that one on mine. Not sure what it is.
Can you see in Finder? Is anything in it?
