I would love to see:

Converter, Crosswalk, Frotz, iBlackjack, iPhysics, Stumbler, SysInfo, Tetromino, and TextEdit brought into the App Store.

Anything you found indispensable?

Apparently iBlackjack is now Blackjack 21 and much improved.

Converter changed any system of measurement over to another. Money, weight, volume, etc...
Stumbler found Wi-Fi networks and told you a lot more about them than the standard Prefs does.
iPhysics was a nice little game that used the accelerometer
SysInfo printed any and all system information of you i-device including what applications were running and what was eating the most resources
Tetromino was a Tetris clone
TextEdit is self explanatory.
