This site makes some good recommendations http://osx.iusethis.com/top

Photoshop elements to edit pictures.
Sandvox to create web pages and blogs.
FireFox 3 for web browsing.
NeoOffice for word processing and spreadsheet.
AppTrap for simple app deleting.
VLC Media player
MPlayer OSX media player
MenuMeters to watch memory, HDD, network and CPU usage.
Flip4Mac WMV Lets you play Windows media files on web sites in Safari.

Speaking from experience with the Mac Mini, unless your video gaming consists of older games and maybe WoW, you might consider buying a console for your gaming.

HandBrake and MacTheRipper- DVD capture and video encoding tools.
Seashore- free, basic image editor- very easy to use.
NeoOffice- free, open-source office suite.
CarbonCopyCloner- free back-up utility- a nice alternative to Time Machine if you don't have a large external drive.
7ZX and StuffIt expander- for dealing with RAR's and ZIP's etc.
Perian and Flip4Mac- codecs for QuickTime or...
VLC Media Player- plays almost anything and very user friendly.
YouControl: Tunes- gives lots of extra options for iTunes including handy media buttons on the menu bar.

Hope this helps :)
