I’ve been playing with settings, and I favour the following:

General/Accessability/Headphone Accommodations … Balanced Tone + Strong.

I did just tried a Custom Audio Setup, but went back to the above setting.

I have Noise Control & Spatial Audi off.

I’m using AirPods Pro, by the way.

How about you? What settings do you use for best audio quality, and which model of AirPods are you using?

Honestly I haven't turned Headphone Accommodations on and I'm happy with the way they sound as-is. Not sure what iOS version you're on, but in iOS 15.1.1 those settings are actually under:

Settings > Accessibility > AirPods > [your AirPods name] > Audio Accessibility Settings > Headphone Accommodations

Not sure why Apple decided to bury AirPod settings under Accessibility instead of directly under Settings or at least Settings > Sounds & Haptics. Very strange categorization choice.

Try enabling that setting.

It greatly improves audio quality.
